WFMW - How to make a quick and easy whole grain bread?



I have never participated in the Backwards Edition of WFMW before today. This should be really awesome!

I would love to have someone guide me to an easy recipe for homemade bread. I would prefer a whole or multigrain bread and one that is not for the bread machine. I want to make it the old fashioned way.


I have never made bread before other than the frozen loaves and quick breads such as pumpkin. It is intimidating to me. If you have a quick, easy, or tried and true recipe for a hearty whole grain bread, I would love you point me in the right direction.

If you've never handmade bread before, a white bread would be the easiest thing to start with. Whole wheat/whole grain doughs tend to be stickier than white dough.

This is a recipe I've had lots of sucess with for a hearty and healthy bread. It has oatmeal and oat bran in it, although you can sub wheat bran. http://foodiefarmgirl.blogspot.com/2006/11/oatmeal-toasting-bread-baking.html

I love making (and eating) homemade WHOLE WHEAT bread. I use all whole wheat (I actually grind my own flour, cause I'm a nerd :) )I have a great and EASY recipe here: www.heavenlyhomemakers.com/monthlyrecipes.htm. Hope it helps!

I agree with Wifey; if you're new to bread-making, start with a white bread (maybe French bread for a spaghetti dinner?) to get your feet wet. Once you have a "feel" for what you're doing, you'll have better success with wheat bread. My favorite wheat bread recipe is at LainesLetters.com :

It's not 100% whole wheat, but it makes rockin' yummy sandwich bread. (Her instructions are for a bread machine, but all you need to do is add the yeast to warm water, let it sit for 5-10 minutes, while you measure the rest of the ingredients. Stir all together, knead, let rise about an hour, punch down and shape into a loaf, place in pan, rise another 30-45 minutes then bake) Good luck & enjoy your bread-making adventures! :)

I made a half batch and used 3.5 cups white and 1 cup wheat flour, and the rolls were amazing!

I started with whole wheat, because ... well, white is so bad for you! This recipe has worked just fine for me.

You might want to see if you can get a copy of "Peter Reinhart's Whole Grain Breads" or "The Bread Baker's Apprentice" from your library--both are by Peter Reinhart. I searched for years for an easy but delicious recipe for pizza dough, and I finally found it in his book "American Pie." Not only were his recipes the easiest for pizza dough, they are just as good (in my opinion) as pizzeria pizza.

I have looked through Bread Baker's Apprentice and have put it on my Amazon wish list. From what I remember in reading through it, there were recipes that weren't overly difficult, and he gives a lot of basic information in the beginning of the book.

Whatever you decide, good luck! Homemade bread is worth the effort. :-)

I never know with bread recipies I find on hte internet because half the time they don't work. I have a white recipe that is fabulous and wonderful and I have a 100% whole wheat that is amazing to. Have you ever heard of the cookbook Whole Foods for the Whole Family? They have great instructions for beginner bread makers and tips for using whole grains. Great healthy cookbook, I got mine on Ebay.
